Chicken Fajitas

After realizing at the last minute I didn't have any fajita seasoning, I came up with this recipe. This turned out so good, we're glad I didn't have a store bought seasoning packet.  

Homemade is always so much better anyway, right?

Chicken Fajitas

Ingredients:
  • 2 bonelesss skinless chicken breasts, cooked and cut into strips
  • 1 lg onion, sliced
  • 1 - 2 bell peppers (any color), sliced
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • salt and pepper to taste
  • 1/4 cup salsa (jar or homemade)
  • 1 tsp lime juice
  • 8 whole wheat tortillas
Directions:
  1. Heat olive oil over medium heat. 
  2. Add onion, peppers and garlic. 
  3. Saute until vegetables are tender. 
  4. Add chili powder, salt and pepper and stir to combine. 
  5. Add cooked chicken and salsa. 
  6. Stir well and heat until chicken is warmed through. 
  7. Stir in lime juice. 
  8. Remove from heat.
  9. Serve on whole wheat tortillas.
Simply add your favorite toppings (sour cream, guacamole, cheese, more salsa, etc.) and enjoy!!

Yield: 8 Servings
